Training really kicked my A** this week! After being humbled on the UT track by some seriously fast locals, mile repeats at Crescent Lake Park took me deep into the pain cave. Consequently, I damaged my meniscus and am currently on the mend. In order to make up for the lack of running, a few good friends and I did the annual Horrible Hundred in Clermont Fl. Honestly, I got in with a great group and we kicked some tail. I felt like I was killing it until the very uneventful end. Basically the ending leads you back to the parking lot of origin....and you're done. No glamour or timing, just a good old pat on the back (from yourself).
Last week, a total success! Work has been totally flowing, hopefully all of the 12 hour shifts we all worked over the months paid off since our inspection is FINALLY OVER!!
In the midst of completeing a 17 hour (off season) training week, I've made some really great meals absorbed some great cooking inspiration (thanks to Top Chef). I created some delicious sautéed portobello's topped with cooked kale, red cabbage carrots and garlic. Also, the Naan pizza finished with an egg was delicious! Also, I'm super stoked about the Eipcurious app for my iPhone!
